Damson Cheese (second type)

Damson Cheese is fruit puree, boiled without sugar and dried afterwards.

Excellent ripe plums should be washed well, cleared of stones, cut and put in some water to boil. Mix continuously until they become a thick paste.

Put an oiled baking sheet on the bottom of a baking dish. Spread the damson cheese in a layer of 1 cm thickness and dry on both sides in low oven temperature until the mix no longer sticks to the fingers.

When it cools down, roll up and store in a cool place.
