Plum jam - Troyan
Plum recipes

Ingredients:

1 kg  plums
1 kg sugar (5 teacups)
25 pcs walnuts
5 grams of citric acid (1 teaspoon)
1 vanilla (or 3-4 leaves of geranium)

Preparation:

Wash, scald and peel the plums. Remove the stones and replace them with walnut kernels. Sprinkle with sugar and leave to stay for 24 hours, cook at medium heat, continuously removing the foam.
At the end of cooking, add the citric acid. Remove the ready jam from heat, flavor with vanilla (or geranium) and pour into jars, closed with caps and keep the jars upside down until the jam cools. Store them in a dry place.
The jam is ready when a syrup drop dripped on a dry porcelain plate, doesn’t spill.
